Custers Carrot Cake

- 2 CUPS cake flour, 2 CUPS sugar, 2 TSPOON baking soda, 2 TSPOON cinnamon, 1 TSPOON SSALT, 1 CUP VEGESTABLE oil, 4 eggs, 3 CUPS SHREDDED carrots, 1 TSPOON vanilla shopping list
How to make it
- 1) Preheat oven to 350F and gease two "9 inch" cake pans & line w/ waxed paper. 2)in a large bowl combine flour,sugar, baking soda,cinnamon and salt.blend in vegetable oil. 3) beat in eggs one at a time then mix in carrots and vanilla, u can do by electric mixer 4)pour batter into prepared pans and bake for 30 to 35 minutes or till cake tester inserted in center comes out clean. let cool then frost w/ creamcheese frosting. CREAMCHEESE FROSTING: In a medium bowl of an electric mixer beat together 8 OUNCE SOFTENED CREAMCHEESE & 1/2 CUP SOFTENED BUTTER. gradually add 454 GRMS CONFECTIONERS SUGAR & 1 TSPOON VANILLA mixing well untill smooth & of sreading consistency. use to frost cooled cake. if desired sprinkle pecans or 1 CUP SLIVERED ALMONDS on sides of cake. use any extra frosting to pipe sides and top of the cake and to make decorative carrots on piped frosting. u can omit cinnamon if this is unavailable.
