Chicken With Capers And Olives Recipe
In our house it's Man-Killer Chicken! I'm a single mom, and when I've had a few dates with a guy and like him, I make this dish the first time I have him over for dinner. Seals his interest every time!

Ingredients
  • 6 Chicken Thighs, Skin on
  • Salt and Pepper to Taste
  • 1 Tablespoon Olive Oil
  • 1/4 C. Dry White Wine
  • 1/2 C. Chopped Ripe Tomato
  • Pinch Red Pepper Flakes
  • 1/3 C. Oil Cured Mixed Italian Olives
  • 1 1/2 Tablespoons Drained Capers
  • 2 Bay Leaves
  • 1/4 C. Good Chicken Stock
  • 1/2 C. Whipping Cream
  • Chopped Parsley for Garnish

Directions
  1. Season chicken with salt and pepper to taste.
  2. Heat a large non-stick frying pan and add oil.
  3. Brown chicken on both sides and remove to a 4-6 quart stove-top casserole.
  4. Add the remaining ingredients, except cream, and simmer.
  5. Cover and cook gently 40 minutes.
  6. Remove chicken to warm platter.
  7. Add cream to casserole.
  8. Simmer 2-3 minutes to reduce/thicken.
  9. S & P to taste and pour over chicken.
  10. Garnish with Parsley.
  11. Nice with brown rice (pour extra sauce over) and oven-roasted mixed vegetables.

I'm with Vickie on loving capers and olives. Chicken thighs are so underutilized and this recipe would certainly elevate them to company status. Yummy. Great post.
