How to make it

  • Saute onions in butter.
  • Whisk together eggs, milk, and basil.
  • Pour egg mixture into pan with onions (or melt butter in a different pan then add egg mixture, ham, and onions - sometimes the original pan will stick).
  • Cook on low.
  • When omelet is beginning to set, pick up an edge and let the rest of the egg flow under - or turn entire omelet over.
  • Sprinkle shredded cheese over omelet then fold omelet in half. May turn heat off and let sit till cheese is melted.
  • Sprinkle paprika on top of omelet when served.
