Frosted Pineapple Cookies

- 1 can (8 ounces) crushed pineapple shopping list
- 1/2 cup shortening shopping list
- 1 cup packed brown sugar shopping list
- 1 egg shopping list
- 1 teaspoon vanilla extract shopping list
- 2 cups all-purpose flour shopping list
- 1-1/2 teaspoons baking powder shopping list
- 1/4 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1-1/2 cups confectioners' sugar shopping list
How to make it
- Drain pineapple, reserving 3 tablespoons juice.
- Set pineapple aside; set juice aside for frosting.
- In a mixing bowl, cream shortening and sugar.
- Add egg; mix well.
- Add pineapple and vanilla; mix well.
- Combine flour, baking powder, baking soda and salt; stir into the creamed mixture.
- Drop by teaspoonfuls 2 in. apart onto greased baking sheets.
- Bake at 325 degrees for 17-20 minutes or until golden.
- Immediately remove from baking sheets to cool on wire racks.
- For frosting, in a small bowl, combine confectioners' sugar with enough of the reserved pineapple juice to achieve a smooth spreading consistency.
- Frost cooled cookies.
- Yield: 3 dozen.

I have a recipe like this but I don't frost them and it make the most incredible moist cookies. Great post,thanks for reminding me about them guess I'll have to make them again, my mouths set for them now. High 5
