Cream Soup Substitute Recipe
Have you ever started a recipe and then discovered you did not have the can of cream soup needed for the recipe. This is a great substitue when that occasion arises.

Ingredients
  • 1 tablespoon margarine
  • 3 tablespoons flour
  • 1/2 cup low sodium chicken broth
  • 1/2 cup low-fat milk
  • Salt and pepper to taste

Directions
  1. Make a basic cream sauce by melting margarine over moderate heat.
  2. Stir in flour; keep stirring until flour and margarine are combined and smooth.
  3. Remove from heat and add the chicken broth and milk, a little at a time, stirring to keep lump-free.
  4. Return to heat. Bring sauce to a gentle boil and cook, stirring constantly, until it thickens.
  5. Taste and adjust seasonings
  6. Can be varied by using vegetable broth, saut�ed diced celery, celery seed, or saut�ed diced mushrooms.
