Ingredients
  • 1/2 cup butter or margarine, softened
  • 2 cups packed brown sugar
  • 2 cups all-purpose flour
  • 1 egg, beaten
  • 1 cup buttermilk or sour milk*
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Whipped cream and fresh mint, optional

Directions
  1. In a mixing bowl, cream the butter and brown sugar.
  2. Add flour; mix until blended.
  3. Set aside 1/2 cup for topping.
  4. To the remaining mixture, add egg, buttermilk, vanilla, baking soda and salt; stir just until blended.
  5. Pour into a greased 13-in. x 9-in. x 2-in. baking pan.
  6. Sprinkle with the reserved flour mixtue.
  7. Bake at 375 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool on a wire rack.
  9. Garnish with whipped cream and mint if desired.
  10. Yield 12-16 servings.
  11. *Editor's Note: To sour milk, place 1 tablespoon white vinegar in a measuring cup; add milk to measure 1 cup.
