Basic  Carolina Yeast Biscuits Recipe
Paula Deen's road trip recipe for Southern style yeast biscuts. Need I say more! Serve with chicken fried steak- oh yum!

Ingredients
  • 1 package yeast
  • 1/2 cup lukewarm water
  • 5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 3/4 cup solid shortening (recommended: Crisco) Lard for the brave at heart
  • 2 cups buttermilk or as needed

Directions
  1. Preheat oven to 400 degrees F.
  2. Dissolve yeast in warm water; set aside.
  3. Mix dry ingredients together.
  4. Cut in shortening.
  5. Add yeast and buttermilk and mix well.
  6. Turn dough onto lightly floured surface, knead briefly and roll out to desired thickness.
  7. Cut with small biscuit cutter and place on greased baking sheet.
  8. Use your knuckles to make an indentation on top of the dough
  9. ( Paula says this gives a homestyle look )
  10. Brush with melted butter.
  11. Paula uses a cast iron pan!
  12. Bake for 12 minutes or until golden brown.
  13. Split biscuits open and ladle on chicken fried steak gravy!!!
