Yowza!!! My idea of maybe the best combination of flavors known to man... try it, you'll like it. Plus and of course, EVERYTHING is better on an English muffin! This is another submission by Chef James Brockman at right@home.com ~ ~ ~

Ingredients
  • 2 Granny Smith apples
  • 3/4 cup crunchy peanut butter
  • 1/4 cup celery, fine dice
  • 1/4 cup raisins
  • 4 English muffins
  • 1 cup alfalfa sprouts OR romaine or iceberg lettuce

Directions
  1. Cut both apples in half, core them and remove the seeds.
  2. DO NOT PEEL!
  3. Dice one apple into small pieces.
  4. Place the peanut butter, celery, raisins and chopped apple in a small bowl and stir until combined.
  5. Split and toast the English muffins.
  6. While muffins toast, slice the second apple into thin slices.
  7. Remove muffin halves from toaster.
  8. Spread 1/4 of the peanut butter mixture on the bottom half of each muffin.
  9. Top with sprouts OR lettuce.
  10. Place apple slices on top.
  11. Serve open faced OR top with other half of muffin.
