Chicken With White Wine And Mushroom Gravy Recipe
This was something I did last night. It was inspired by another recipe, but I changed it quite a bit so I thought I would add it. This was easy to make, and my hubby loved it!

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 sm can of condensed golden mushroom soup
  • 1/2 c. white cooking wine
  • 3/4 c. chicken broth or stock
  • 1/8 c. butter softened
  • 4 oz. softened cream cheese
  • 1 sm onion diced
  • 3 cloves of garlic minced
  • Olive or grapeseed oil
  • Pepper
  • Penne pasta-enough for 4 servings

Directions
  1. Melt butter in a large skillet over medium heat
  2. Add onions and saute until soft
  3. Add garlic and cook for another 1-2 minutes
  4. Put onions and garlic in a bowl and set aside
  5. Turn heat up to med-high
  6. Add oil to coat bottom of the pan
  7. Brown both sides of the chicken
  8. Place chicken in a 9x13 pan
  9. Deglaze the skillet with the wine and broth
  10. Add soup and onion mixture
  11. Stir until smooth
  12. Add cream cheese and stir until smooth and creamy
  13. Pour over chicken and place in the oven
  14. Cook for 30-35 minutes
  15. While chicken is cooking prepare pasta according to directions
  16. Serve chicken over pasta

Mmmm . . . I might make this tonight with one tiny change - hubby prefers me to cube the chicken, so I just brown it then cook it on top of stove and pour it all on top of the pasta - I think he's just lazy ; )
