WISCONSIN MASCARPONE CHOCOLATE TOWER

- 4 ounces dark chocolate, chopped shopping list
- 2 tablespoons unsalted butter shopping list
- 1 1/4 cups cream shopping list
- 10 ounces Wisconsin mascarpone cheese shopping list
- 1/3 cup cocoa shopping list
- 6 ounces white chocolate, melted shopping list
- 6 ounces dark chocolate, melted shopping list
- cocoa, fresh fruit and mint sprigs, for garnish shopping list
- 18 pieces parchment (3 1/2 inches x 5 inches shopping list
How to make it
- Roll 6 pieces of parchment into tubes. Secure with tape. Set aside.
- In small double boiler over low heat, melt chocolate and butter. Stir. In medium bowl, beat cream and Mascarpone until stiff. Add cocoa. Fold chocolate into cheese mixture. Put mixture into pastry bag. Stand parchment tubes on plate. Pipe mousse into parchment tubes. Fill completely with mousse. Freeze several hours. Remove paper from frozen mousse.
- Drizzle 6 parchment strips with melted white chocolate. Wrap mousse with chocolate-drizzled parchment. Refrigerate. Allow chocolate to set on mousse 5 minutes. Peel paper from mousse. Chocolate will remain on mousse.
- Drizzle 6 parchment strips with melted dark chocolate. Wrap mousse and refrigerate until serving.
- To serve, remove parchment. Place mousse tower in center of plate. Dust edge of plate with cocoa. Garnish with fresh fruit and mint sprig.

I wish I could see a picture of this! It sounds soooo gooood!!! So in the end does it look like 6 towers on a plate, or do you combine them in one building?
