From the VIP cookbook, this was served in the White House at Christmas time by Mrs. Ronald Regan. It is a relatively light, yet elegant starter soup. My mom has fixed this a few times, very nice stuff here. Enjoy.

Ingredients
  • 1/4 cup butter
  • 5 large onions (I prefer vidalia)
  • 5 cups beef broth
  • 1/2 cup celery leaves
  • 1 large potato, sliced
  • 1 cup dry white wine
  • 1tbsp vinegar
  • 2 tsp sugar
  • 1 cup light cream
  • 1 tbsp minced parsley
  • salt and pepper to taste

Directions
  1. Melt butter in a large saucepan.
  2. Add chopped onions, mix well
  3. Add beef broth, celery leaves, and potato.
  4. Bring to boiling, cover and simmer for 30 min.
  5. Puree mixture in blender. Return to saucepand and blend in wine, vinegar, and sugar.
  6. Bring to boiling and simmer 5 min.
  7. Stir in cream, parsley, salt, and pepper.
  8. Heat thoroughly but do not boil.
  9. Serve immediately.
