Soft Chocolate Cake

- 50g bittersweet chocolate (70%), chopped shopping list
- 50g pitted dried plums, rehydrated (in water or in some liqueur), chopped shopping list
- 50g chocolate covered almonds (or hazeltnuts, wafers, candied orange - anything you like that comes in pieces :), chopped shopping list
- 100g butter (i use low-fat spread, doesn't spoil the texture) shopping list
- 2 eggs, lightly beaten shopping list
- 225g sugar shopping list
- 50g flour shopping list
- 1 teaspoon baking powder shopping list
- 1 pinch of salt shopping list
How to make it
- Set the oven to 175C (325F).
- Melt the chocolate and butter over bain-marie, when melted turn down the heat to lowest so that it won't freeze back.
- As it melts mix flour, baking powder, sugar and salt. Set aside.
- You need to work quickly now. Take a spoonful of the melted mixture and stir quickly into beaten eggs to temper the eggs (this will keep them from cooking in the batch). Then add the eggs into the batch, incorporate them well.
- Pour in the flour mix and incorporate without overbeating the egg-mixture.
- Stir in chopped chocolate almonds and chopped plums.
- Bake for 30 minutes. When done, should be springy in the middle.
- Cut into 15 pieces (they are small-so should they be :) and let sit in the mold 10 minutes.
- Let cool on a wire rack for about 30 minutes. If you serve while warm, chocolate almond will still be gooey inside!
