Pasta With Spinach And Ricotta Recipe
This is an awesome pasta dish for those that love spinach and ricotta like I do. It is a very impressive dish and is so big on taste. Enjoy

Ingredients
  • 1 pound spinach
  • 2 cups ricotta cheese or cottage cheese
  • 1/2 cup grated parmesan cheese
  • 1 egg yolk
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • Fresh pasta rolled and cut into 2” squares
  • 1/3 cup butter
  • 2 tablespoons chopped fresh mixed herbs
  • 2 teaspoons lemon juice

Directions
  1. In large saucepan cook spinach in small amount of water until tender then drain and cool.
  2. Squeeze spinach dry then chop in a blender or food processor.
  3. Add ricotta cheese, parmesan cheese, egg yolk, salt, pepper and nutmeg.
  4. Process until fairly smooth then plus 1/2 teaspoon filling in middle of each pasta square.
  5. Fold in half to make a triangle then press edges to seal.
  6. Wrap long side of triangle around index finger and press ends together.
  7. Leave on a towel to dry turning after 1 hour.
  8. Cook in a large saucepan of boiling water for 15 minutes.
  9. In a small saucepan melt butter then stir in herbs and lemon juice.
  10. Drain pasta then put in a heated serving dish.
  11. Add herb butter sauce then stir thoroughly and serve at once.
