Ingredients
  • 3 sticks unsalted butter, room temperature
  • 2 cups sugar
  • 5 large eggs
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/2 teaspoons pure almond extract
  • 3 cups cake flour (not self-rising)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 4 ounces sweetened flaked coconut

Directions
  1. Preheat oven to 350 degrees F.
  2. Grease OR spray two 9" round cake pans.
  3. Cream together butter and sugar in bowl of an electric mixer until fluffy.
  4. Add the eggs.
  5. Mix well
  6. Add vanilla and almond extracts.
  7. Mix well
  8. With mixer on low speed, add dry ingredients alternately with buttermilk. and in three additions.
  9. Be sure to begin and end with dry mix.
  10. Fold in the coconut with a spatula.
  11. Pour batter evenly into prepared pans.
  12. Bake for 45 to 55 minutes OR until cakes test done.
  13. Remove cakes from oven.
  14. Cool pans on wire rack for 30 minutes.
  15. Turn cakes out to cool completely.
  16. To assemble cake, place one layer top side down on a serving platter.
  17. Spread with frosting.
  18. Place the second layer on top, top side down.
  19. Frost the top and sides of the cake.
  20. Sprinkle coconut on top of the cake and press onto the sides.
