Perfect Indoor Filet Mignon Recipe

Ingredients

2-6 oz. bacon-wrapped filets

2 T. bacon fat (use olive oil if you prefer but, what the heck, you're eating steak!)

1 T. fresh course-ground black pepper

Ovenproof skillet

Directions

Rub pepper into filets. Allow to stand at room temperature approximately 15 minutes while oven preheats.

Preheat oven to 450 degrees.

After oven is heated, melt bacon fat in skillet over medium-high heat until shimmering.

Add filets to skillet and cook 3 minutes on each side, until nicely browned.

Move skillet to oven and cook 6 - 8 minutes for medium-rare.

Remove skillet from oven, tent with aluminum foil and let stand for 10 minutes before serving.

This does sound fabulous! The last time I attempted to make filets indoor was a disaster. I charred them beyond all recognition while cooking dinner for a new boyfriend. I think he forgave me though, because now he's my husband. I'll surprise him with these for Father's Day. Thanks for the post!
