Toasty Rum Raisin Cider

- 1 generous tablespoon of butter shopping list
- 2 tsp of sugar shopping list
- 4 whole cloves* shopping list
- 2 cinnamon sticks* shopping list
- 1 strip of lemon peel* shopping list
- *tied together in a piece of cheesecloth shopping list
- 2 tbsp of honey shopping list
- 1/2 cup of golden raisins shopping list
- 6 cups of apple cider shopping list
- 16 ounces of spiced rum shopping list
- dried apple slices for garnish shopping list
- cinnamon sticks for garnish shopping list
How to make it
- In a sauce pan heat the butter over medium heat.
- Add sugar.
- Cook until the sugar dissolves and begins to carmelize about five minutes.
- Tie up the cloves, lemon peel and cinnamon sticks in a bit of cheesecloth.
- Add cider to saucepan along with the bag of spices.
- Add honey and raisins to saucepan.
- Heat until just below the simmering point...when you see whisps of steam, you are good.
- Raisins will plump up too.
- Remove the spice bag carefully. You don't want to drink a clove, ugh!
- Off heat, add the spiced rum, and ladle into heat proof cups.
- add cinnamon stir stick and float an apple slice on top.
- Turn on the Christmas carols (I recommend Aaron Neville's or Chris Issaac's Christmas cd) and stare at the twinkling lights on your pretty tree. Relax and have a Merry Christmas.
