How to make it

  • In a sauce pan heat the butter over medium heat.
  • Add sugar.
  • Cook until the sugar dissolves and begins to carmelize about five minutes.
  • Tie up the cloves, lemon peel and cinnamon sticks in a bit of cheesecloth.
  • Add cider to saucepan along with the bag of spices.
  • Add honey and raisins to saucepan.
  • Heat until just below the simmering point...when you see whisps of steam, you are good.
  • Raisins will plump up too.
  • Remove the spice bag carefully. You don't want to drink a clove, ugh!
  • Off heat, add the spiced rum, and ladle into heat proof cups.
  • add cinnamon stir stick and float an apple slice on top.
  • Turn on the Christmas carols (I recommend Aaron Neville's or Chris Issaac's Christmas cd) and stare at the twinkling lights on your pretty tree. Relax and have a Merry Christmas.
