Santa Fe Enchiladas Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mason Estate in Fate, Texas in 1991.

Ingredients
  • 1 pound very lean ground round
  • 1 white onion chopped
  • 2 tablespoons oil
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon chili powder
  • 3 cups beef bouillon
  • 1/2 teaspoon cumin
  • 2 jalapenos finely chopped
  • 8 ounces shredded cheddar cheese
  • 10 soft flour tortillas

Directions
  1. Sauté onions and beef in oil then drain and remove from pan.
  2. Melt butter in skillet then add flour and beef bouillon to make gravy.
  3. Add spices and simmer 5 minutes then dip each tortilla in the gravy.
  4. Spread on meat mixture then the cheese and roll up and put in baking pan.
  5. Pour remaining gravy over enchiladas then top with cheese and bake at 350 for 15 minutes.
