How to make it

  • Preheat oven to 300 degrees
  • Mix coconut and melted butter
  • Press half into 2 pie pans, bottom and sides
  • Bake until golden brown (about 30 minutes)
  • Cool in refrigerator
  • With a hand mixer whip cream cheese until fluffy (make sure it's at room temperature to do this).
  • Add condensed milk and orange juice.
  • Mix until well blended
  • Fold in pineapple
  • Pour into pie crusts
  • Top with cool whip
  • Sprinkle with coconut
  • Refrigerate at least 4 hrs. before cutting.

    This is a combination of 2 recipes. The crust is one recipe, the filling is a partial of another recipe with additions and subtractions. This crust is so good. It's crispy, slices very well and could be used with other recipes that call for graham cracker type crusts. The filling can be changed by changing the pineapple to maybe cherries or any other fruits. The orange juice can be changed as long as you use a juice that is citrus such as lemon or tangerine. You can garnish this with the coconut, nuts or maybe cherries to make it more colorful. You can also cut the recipe in half and make just one pie but after tasting this, you may be glad you made two.
