This is a rich home made fruit cake.They turned out great.It's moist,dark brown cake with plenty of nuts&dried fruits soaked in rum for several days ahead....

Ingredients
  • Plain flour 300g
  • mixed dried fruit 250g(soaked in rum)
  • raisins 200g
  • dates 5og
  • honey 130ml
  • unsalted butter softened 200g
  • dark brown sugar 175g
  • fresh orange 1(juice&zest only)
  • mixed spice 1tsp
  • coco powder 2tsp
  • egg 2 beaten
  • ground almonds 25g
  • baking soda 1/2tsp
  • baking powder 1/2tsp
  • rum 2tsp

Directions
  1. In a saucepan add the fruits,butter,sugar,honey,orange juice&zest,mixed spice,coco powder,rum
  2. Heat the mixture until it reaches a gentle boil,simmer for 5min
  3. Remove&cool
  4. Then add the beaten eggs,flr bit by bit,ground almonds,baking soda,baking pwder&mix it well with wooden spoon...
  5. pour the mixture &bake for 1 hr
