How to make it

  • Saute the leeks in butter and olive oil for about 5 mins, until soft.
  • Add the wine and 1 cup stock,cook for about 10-15 mins,the leeks should be cooked and not tough to bite.
  • Stir in the pumpkin puree and add remaiming stock to the consistency you like. Simmer over low heat 10 mins.
  • Stir in the milk or cream.
  • Season to taste and add the honey making sure its well-blended.
  • Serve and top with cheese if liked.
