Pumpkin and Leek Soup

- 3 cups Cooked and Pureed or canned pumpkin shopping list
- 1 large leek washed and sliced to 1/8 of inch shopping list
- 2 TBS butter shopping list
- 1 tBS olive oil shopping list
- 1/2 CUP white wine shopping list
- 2-3 CUPS chicken stock shopping list
- salt TO TASTE shopping list
- 1 CUP milk OR CREAM shopping list
- 1/2 TSP cumin shopping list
- 1 TSP cinnamon shopping list
- 1 TSP MRS dASH seasoning shopping list
- 2 tBS honey shopping list
How to make it
- Saute the leeks in butter and olive oil for about 5 mins, until soft.
- Add the wine and 1 cup stock,cook for about 10-15 mins,the leeks should be cooked and not tough to bite.
- Stir in the pumpkin puree and add remaiming stock to the consistency you like. Simmer over low heat 10 mins.
- Stir in the milk or cream.
- Season to taste and add the honey making sure its well-blended.
- Serve and top with cheese if liked.
