Tostones Recipe
Typical side dish for Carribean meals, Puerto Rican, Cuban, Domican. The Fried Green Plantains would be the equivelent to French Fries. Everyone loves these when I make them.

Ingredients
  • Green Plantains 4-6 large
  • Vegetable Oil for frying
  • 1/2 teas.fresh garlic, crushed
  • olive oil to mix with garlic for dipping sauce
  • pinch of salt
  • small teacup to use to smash the plantains down into flat circles.

Directions
  1. Peel the plantains, I use a steak knife and run them down the sides of the plantains in quartered segments. Peel skin away.
  2. Cut plantains in 1/2 or so sections, put on the side.
  3. In deep frying pan, place enough oil to cover the fried plantains.
  4. Heat oil on medium heat, oil is ready when you drop a bit of water in it and it crackles.
  5. Slowly put a few pieces at a time. Do not over crowd. Fry for about 3 minutes or till slighly golden.
  6. Remove to a chopping board with a piece of cheesecloth or kitchen towel. Take the small teacup and gently smash these down till they are flattened. Test one and if it doesnt smash easily then fry a little longer till you are able to smash them easily but not fall apart.
  7. When they are smashed flat, resembling a pinwheeled shaped, place them back in the oil to finish frying till cooked . 3-5 Min longer.
  8. Drain on paper towels and sprinkle pinch of salt.
  9. Mix the 1/2 teas garlic with about 1/4 cup olive oil.
  10. Drizzle while hot, or dip into the sauce. Best if served immediately.
  11. Take a little practice to get it right but once you discover the unique taste of the Plantanos (Plantains in Spanish) You'll love em.
  12. It's often times likened to French fries! But with some Pizzaz! Everyone that isnt familar with Carribean food, when they eat these, they love them! Enjoy!
