Carrot Souffle

- 2 cups cooked carrots shopping list
- 1/4 cup honey shopping list
- 1 teaspoon salt shopping list
- 1 1/2 cups light cream or half & half shopping list
- 3 tablespoons cornstarch shopping list
- 3 eggs, beaten shopping list
- 1/4 cup melted butter shopping list
How to make it
- Process carrots, honey, salt and 3/4 cup of the cream in a blender until smooth.
- Mix the remaining 3/4 cup cream and cornstarch in a small bowl.
- Add to the blender with the eggs and butter and process until smooth.
- Spoon into a greased 1 1/2 or 2 quart baking dish.
- Bake at 400 degrees for 45 to 50 minutes or until set.
