How to make it

  • Directions for biscuits:
  • Adjust oven rack to middle shelf and preheat oven to 400 degrees. Lightly butter baking sheet
  • Sift together flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Add the rosemary, shortening, and lemon zest, and mix until the mixture resembles coarse meal. Make a well in the center.
  • In a separate bowl, lightly beat the egg, then stir in the buttermilk, Add this mixture and the strawberries to the well, and mix with a wooden spoon just until blended. The mixture should be soft and tender. Do not over mix.
  • Turn out the dough onto a well floured board. Gather the dough and gently knead 2 or 3 times until it is well formed. Do not overwork it. Pat the dough, 5 or 6 times, into a circle about 1/2 inch thick. Dip a 3-inch round cookie cutter into flour and cut out a many circles as possible. Gather the dough scraps, pat them into 1/2-inch thick circle, and cut out more biscuits.
  • Place the biscuits on the prepared sheet and bake until golden, about 20 minutes. Transfer to a rack and cool slightly.
  • Directions for glaze:
  • Combine melted butter, sugar, and lemon juice in a small bowl. Brush the glaze over the warm biscuits. Serve hot.
