Hot Strawberry And Rosemary Biscuits

- Biscuits: shopping list
- 2 cups sifted unbleached all-purpose flour shopping list
- 1/4 cup sugar (add a little more sugar if you want it sweeter) shopping list
- 1 tbs baking powder shopping list
- 1/4 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 2 tsp minced fresh rosemary leaves, or dried rosemary crumbled (fresh is always best) shopping list
- 1 tsp finely grated lemon zest (added 1 1/2 tsp for a little more kick) shopping list
- 6 tbs vegetable shortening, chilled (I used butter flavored shortening) shopping list
- 1 large egg shopping list
- 2/3 cup buttermilk shopping list
- 1 cup diced (1/4-inch cubes) fresh strawberries shopping list
- Glaze: shopping list
- 3 tbs unsalted butter, melted shopping list
- 1 1/2 tbs sugar shopping list
- 2 tsp fresh lemon juice shopping list
How to make it
- Directions for biscuits:
- Adjust oven rack to middle shelf and preheat oven to 400 degrees. Lightly butter baking sheet
- Sift together flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Add the rosemary, shortening, and lemon zest, and mix until the mixture resembles coarse meal. Make a well in the center.
- In a separate bowl, lightly beat the egg, then stir in the buttermilk, Add this mixture and the strawberries to the well, and mix with a wooden spoon just until blended. The mixture should be soft and tender. Do not over mix.
- Turn out the dough onto a well floured board. Gather the dough and gently knead 2 or 3 times until it is well formed. Do not overwork it. Pat the dough, 5 or 6 times, into a circle about 1/2 inch thick. Dip a 3-inch round cookie cutter into flour and cut out a many circles as possible. Gather the dough scraps, pat them into 1/2-inch thick circle, and cut out more biscuits.
- Place the biscuits on the prepared sheet and bake until golden, about 20 minutes. Transfer to a rack and cool slightly.
- Directions for glaze:
- Combine melted butter, sugar, and lemon juice in a small bowl. Brush the glaze over the warm biscuits. Serve hot.
