How to make it

  • Rinse and pick over dried beans.
  • Put beans in a large pot with 6 cups of water. Bring to a boil, then reduce heat to low and simmer until the beans are tender, about 1 1/2 to 2 hours.
  • Meanwhile, in a large nonstick skillet, heat the lard or oil and brown the pork. I seasoned my pork with a little extra seasoning to layer the flavors.
  • Add the remaining ingredients and cook, stirring, until onions are softened about 5 minutes.
  • Add 1 cup of water. Bring to a boil then reduce heat to low, cover and simmer for 30 minutes. When the beans are tender, add the pork mixture to the beans.
  • Cook uncovered until liquid thickens and the flavors blend, about 20-25 minutes.
  • Remove the bay leaves and habanero chili.
  • Adjust seasoning.
  • Serve.

    I just made this and it is very good. I didnt have a habenero so i used 2 red jalapenos and some habenero sauce.(Yucatan brand I think)
    The cooked pork and onion mixture alone was awesome. Love the spice and the heat. Thanks for posting.
