Black Beans With Diced Pork Yucatan Style
From choclytcandy 15 years agoIngredients
- 2 cups dried black beans shopping list
- 1 tbs lard or vegetable oil shopping list
- 1 1/2 lbs boneless pork, cut into 1-inch pieces shopping list
- 1 medium white onion, finely chopped shopping list
- 2 large garlic cloves, finely chopped shopping list
- 12 fresh chopped epazote leaves, or 1 tsp dried epazote shopping list
- 1 tbs chopped fresh cilantro shopping list
- 2 bay leaves shopping list
- 1/2 habanero chile, seeded (wear protective gloves) shopping list
- 1 tsp salt, or to taste shopping list
How to make it
- Rinse and pick over dried beans.
- Put beans in a large pot with 6 cups of water. Bring to a boil, then reduce heat to low and simmer until the beans are tender, about 1 1/2 to 2 hours.
- Meanwhile, in a large nonstick skillet, heat the lard or oil and brown the pork. I seasoned my pork with a little extra seasoning to layer the flavors.
- Add the remaining ingredients and cook, stirring, until onions are softened about 5 minutes.
- Add 1 cup of water. Bring to a boil then reduce heat to low, cover and simmer for 30 minutes. When the beans are tender, add the pork mixture to the beans.
- Cook uncovered until liquid thickens and the flavors blend, about 20-25 minutes.
- Remove the bay leaves and habanero chili.
- Adjust seasoning.
- Serve.
