Mushroom Pinenut Orzo-ci

- 1/2 cup pine nuts shopping list
- 1/2 stick butter shopping list
- 1lb fresh mushrooms, roughly chopped(baby bellas are great in this) shopping list
- 1 onion, chopped shopping list
- 3 cloves garlic, minced shopping list
- juice from 1/2 lemon shopping list
- 2 springs fresh rosemary shopping list
- 4 cups pork or veggie stock(I use pork stock from smoking a pork loin in the slow cooker) shopping list
- 2 cups orzo shopping list
- fresh ground pepper shopping list
How to make it
- In either dry skillet or oven, toast pine nuts for about 10 minutes to soften and enhance flavor.
- In dutch oven, saute onion, garlic and mushrooms until onions begin to soften.
- Add stock and orzo and bring just to a boil.
- Reduce heat to low, add rosemary, cover and cook about 12-15 minutes, until liquid has been absorbed.
- Add lemon juice, pine nuts and pepper to taste, stir.

Sounds like a great recipe. Love pine nuts. We livse in a place that the trees have pine nuts. But the kids eat them before you could ever get a half cut together. Thanks for a great recipe
