How to make it

  • In either dry skillet or oven, toast pine nuts for about 10 minutes to soften and enhance flavor.
  • In dutch oven, saute onion, garlic and mushrooms until onions begin to soften.
  • Add stock and orzo and bring just to a boil.
  • Reduce heat to low, add rosemary, cover and cook about 12-15 minutes, until liquid has been absorbed.
  • Add lemon juice, pine nuts and pepper to taste, stir.

    Sounds like a great recipe. Love pine nuts. We livse in a place that the trees have pine nuts. But the kids eat them before you could ever get a half cut together. Thanks for a great recipe
