An easy earthy side dish which goes great with pork. I highly recommend adding this dish to a menu if you've got some pork stock to use up.

Ingredients
  • 1/2 cup pine nuts
  • 1/2 stick butter
  • 1lb fresh mushrooms, roughly chopped(baby bellas are great in this)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • juice from 1/2 lemon
  • 2 springs fresh rosemary
  • 4 cups pork or veggie stock(I use pork stock from smoking a pork loin in the slow cooker)
  • 2 cups orzo
  • fresh ground pepper

Directions
  1. In either dry skillet or oven, toast pine nuts for about 10 minutes to soften and enhance flavor.
  2. In dutch oven, saute onion, garlic and mushrooms until onions begin to soften.
  3. Add stock and orzo and bring just to a boil.
  4. Reduce heat to low, add rosemary, cover and cook about 12-15 minutes, until liquid has been absorbed.
  5. Add lemon juice, pine nuts and pepper to taste, stir.

Sounds like a great recipe. Love pine nuts. We livse in a place that the trees have pine nuts. But the kids eat them before you could ever get a half cut together. Thanks for a great recipe
