Smoked Haddock And Cucumber Salad Recipe
SMOKED HADDOCK AND CUCUMBER SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hackett Estate in Allen, Texas in 1981.

Ingredients
  • 1 pound smoked haddock fillets skinned and sliced
  • 1/2 cucumber cut into strips
  • 4 spring onions chopped
  • Rind and juice of 1 lime
  • 1 tablespoon fresh chopped chives
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 4 ounces natural yogurt

Directions
  1. Place fish in a suitable container then add 2 tablespoons water.
  2. Cover and cook in microwave on high for 2 minutes.
  3. Remove fish slices using a slotted spoon and leave to cool.
  4. Mix together the cucumber and spring onion then arrange in a pile on a plate.
  5. Mix together the yogurt, chives, lime rind and juice.
  6. Place fish on top of cucumber mixture and pour over yogurt mixture.
