How to make it

  • Preheat oven to 400F
  • Spread flour on baking sheet and toast in oven 45 to 60 minutes, stir now and then until nut btrown.
  • Sift into bowl and set aside
  • make "andouille" turkey sausage:
  • Combine turkey, seasoning and 1 Tbs garlic.
  • Form 1 tbs of meat into small patties
  • Brown both sides in 1 tbs oil.
  • Remove and set aside
  • Add remaining oil to pan and cook and stir vegetables ( except okra ) and garlic and 1 Tbs cajun seasoning until soft about 10 mins.
  • Sprinkle on flour cook and stir 2 mins.
  • Slowly add stock while stirring
  • Stir in remianing Cajun seasoning and sausage and okra.
  • Bring to a boil
  • reduce heat and simmer 20 minutes
  • Skim off any foam from top as it rises
  • Add shrimp and cook till opague- 5 to 10 mins
  • Season with salt and pepper
  • Serve over cooked brown or white rice in soup cups
  • Remove bay leaf.

    YA YA!! This is such an awesome gumbo. I did have to mit the okra (none in store) and I added file powder (because it's signature in gumbo!) but MAN was it good.
