Chicken And Cheese Casserole Recipe

Ingredients

3-1/2 cups rotisserie chicken, chopped

1 can cream of chicken soup

1 can cream of mushroom / celery soup

1 can diced tomatoes

1 onion, chopped and sauteed

1-1/2 cups of grated Monterey Jack cheese

1 bag nacho flavored Doritos

(I like Zesty Cheese)

Directions

Crush chips into bite sized pieces.

Mix the soups, diced tomatoes, sauteed onion, cheese and chicken.

You can either include the broken pieces of Doritos in the mixture or sprinkle them on top. By adding them into the mixture, they help to absorb some of the moisture.

Pour the mixture into a casserole dish and bake at 350 for 30-35 minutes or until the cheese melts.

Serve with a side salad and or your favorite vegetable.

Note: I sometimes put 3/4 of the Doritos into the casserole and sprinkle the rest on top.
