Eggs Baked With Leeks And Tarragon

- 1/2 stick butter shopping list
- 3 leeks, white and light green part, coarsely chopped and cleaned shopping list
- 1 1/2 cups gruyere cheese, grated shopping list
- 1/2 cup parmesan cheese, grated shopping list
- 8 large eggs shopping list
- 2 cups whipping cream shopping list
- 1 1/2 tsp. dried tarragon shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 375
- Butter 9x13 glass baking dish with 1 tbls. butter
- Melt remaining 3 tbls. butter in skillet
- Add leeks and saute until tender, about 5 minutes
- Spread on bottom of baking dish
- In mixing bowl, add cheeses and mix together
- Sprinkle 1/2 cup cheese onto leeks
- In mixing bowl, whisk eggs, cream, tarragon, and salt and pepper
- Pour into baking dish
- Bake about 30 minutes, top golden brown and eggs set
- Sprinkle remaining cheese over top
- Bake until cheese melts, about 5 minutes
