Not Your Average Ham And Cheese Sandwich Recipe
When faced with a preponderence of leftover ham, you make do. This is quite nice even as a hot appetizer, just cut in quarters to make it easy to eat. Makes a good lunch with fruit salad, too.

Ingredients
  • 1/2 lb. cooked ham, cut in 1/4 inch dice
  • 1/2 lb. best sharp cheddar cheese, grated
  • 1/3 cup of finely chopped onion
  • 1/4 cup of water chestnuts, drained and chopped
  • 2 hard boiled eggs, diced
  • 1/2 cup of chili sauce
  • 3 tbsp. of salad dressing
  • 5 English muffins split or
  • 5 hamburger buns, split and toasted lightly

Directions
  1. Combine all ingredients (up until the buns or bread); mix well.
  2. If you are in the appetizer mode, use those little square rye breads and fill up a sheet pan with little open face sandwiches.
  3. Alternately, spread muffins or hamburger buns with ham filling.
  4. You can refrigerate these ahead, tightly covered in foil until you need them.
  5. Bake at 400 degrees for 10 minutes.
  6. Serve.

Hmmmm, no, not average at all...and I hear we have some leftover ham at home when I get there! This sounds pretty tasty to me - keep 'em coming, notcho...I'm lovin' all these tastes tonight!
