How to make it

  • Clean goat and wash with juice of a bitter orange or lemon--may let sit for 1/2 hr.
  • Rub goat with oil with annatto, garlic, orgenao, salt, pepper and vinegar.
  • In a large pot saute goat in hot oil til golden brown.
  • Add the rest of the ingredients and saute them.
  • Add water to cover, and cook for 1 1/2 hrs.
  • Lower the heat and add the potatoes, cook until tender. Add the petit-pois (peas). Adjust seasoning if necessary.

    I had a Tapas restaurant in Philadelphia. Goat Fricasse was the most popular item on the menu. When the guests didn't know it was goat they tried this item. (menu was in spanish with translation by wait staff)

    I think this recipe sounds great! I have had goat, though I didn't cook it myself, and it was great! I will save this recipe and try it soon. I live in an area that has a sizeable hispanic population, and the specialty stores should carry it. Goat is raised locally too, so I should be able to get my hands on some, though I have been into lamb lately. Thanks for the recipe and re-igniting my interest in goat!

    Not much into mutton...tried it once when I had the flu and got sick afterwards..never got the taste of it out of my head after that...too wild tasting for me...but this would be fine if you substituted VEAL for the goat...I'll bet....and then you wouldn't need the orange/lemon rub either..I'll give it a try and let you know...Thanks for the wonderful recipe idea...Minus the Goat....
