Santa Fe Cheesecake

- 1/2 cup crushed tortilla chips shopping list
- 1 tablespoon and 1 1/2 teaspoons butter, melted shopping list
- 8 ounces cream cheese, siftened shopping list
- 1 large egg, lightly beaten shopping list
- 1 cup monterey jack cheese, shredded shopping list
- 4 ounces green chiles, drained and chopped shopping list
- 1/2 cup sour cream shopping list
- 1/2 cup yellow bell pepper shopping list
- 1/4 cup green onions shopping list
- 2 tablespoons and 2 teaspoons tomato, chopped shopping list
How to make it
- Preheat oven to 325 degrees F.
- Combine tortilla chips and butter on bottom of greased 9" springform pan.
- Place pan on baking sheet.
- Bake for 15 minutes.
- In large mixing bowl, beat cream cheese and egg on low speed until just combined.
- Stir in Monterey Jack cheese and chiles.
- Pour over crust.
- Bake for 30 to 35 minutes OR until center is almost set.
- Rmove from oven.
- Place pan on wire rack.
- Spread sour cream over cheesecake.
- Carefully run a knife around the edge of the pan to loosen.
- Cool for 1 hour.
- Refrigerate overnight.
- Remove sides of pan just before serving.
- Garnish with yellow pepper, onions and tomatoes.
- Refrigerate leftovers.
- Serve with crackers OR party breads.
