Ingredients
  • 1/2 cup crushed tortilla chips
  • 1 tablespoon and 1 1/2 teaspoons butter, melted
  • 8 ounces cream cheese, siftened
  • 1 large egg, lightly beaten
  • 1 cup Monterey Jack cheese, shredded
  • 4 ounces green chiles, drained and chopped
  • 1/2 cup sour cream
  • 1/2 cup yellow bell pepper
  • 1/4 cup green onions
  • 2 tablespoons and 2 teaspoons tomato, chopped

Directions
  1. Preheat oven to 325 degrees F.
  2. Combine tortilla chips and butter on bottom of greased 9" springform pan.
  3. Place pan on baking sheet.
  4. Bake for 15 minutes.
  5. In large mixing bowl, beat cream cheese and egg on low speed until just combined.
  6. Stir in Monterey Jack cheese and chiles.
  7. Pour over crust.
  8. Bake for 30 to 35 minutes OR until center is almost set.
  9. Rmove from oven.
  10. Place pan on wire rack.
  11. Spread sour cream over cheesecake.
  12. Carefully run a knife around the edge of the pan to loosen.
  13. Cool for 1 hour.
  14. Refrigerate overnight.
  15. Remove sides of pan just before serving.
  16. Garnish with yellow pepper, onions and tomatoes.
  17. Refrigerate leftovers.
  18. Serve with crackers OR party breads.
