Chicken and sage hotpot

- 2 boneless chicken breasts shopping list
- olive oil shopping list
- 2 garlic cloves, minced shopping list
- 1 large onion, chopped shopping list
- 1 tbsp dried sage leaves shopping list
- 1/2 tsp each salt and pepper shopping list
- 28 oz can of diced tomatoes shopping list
- 1 cup water shopping list
- 1 1/2 cups orzo shopping list
- 4 cups baby spinach shopping list
How to make it
- in a large skillet:
- slice chicken into large bite size pieces and fry in olive oil over medium-high, 5 to 6 min
- add garlic and onion, cook 2-3 mins
- crumble sage and sprinkle with salt and pepper
- add tomatoes and water
- bring to a boil
- stir in orzo
- reduce heat to medium-low, simmer until most of liquid is absorbed, 10 mins, stirring often
- add spinach, remove from heat, cover and let stand 3 to 5 mins
