How to make it

  • in a large skillet:
  • slice chicken into large bite size pieces and fry in olive oil over medium-high, 5 to 6 min
  • add garlic and onion, cook 2-3 mins
  • crumble sage and sprinkle with salt and pepper
  • add tomatoes and water
  • bring to a boil
  • stir in orzo
  • reduce heat to medium-low, simmer until most of liquid is absorbed, 10 mins, stirring often
  • add spinach, remove from heat, cover and let stand 3 to 5 mins
