This is a wonderful summer soup. Add some rustic bread to this!

Ingredients
  • Ripe peeled and diced tomato
  • 2 large avocados - peeled, pitted, and then sliced
  • 1/4 c fresh lemon juice
  • 1 qrt. tomato juice
  • 1 small onion, chopped
  • 1 green bell pepper,
  • 1/4 cup chopped fresh chives
  • cayenne pepper(or hot pepper sauce) to taste
  • 1 1/4 c plain nonfat yogurt
  • Add salt to taste

Directions
  1. Place the tomato, the avocados, onion, green bell pepper, and the lemon juice into the medium sized bowl of the food processor.
  2. Process the soup.
  3. Pour in 1 c. tomato juice, and blend.
  4. Add salt and pepper to taste.
  5. Enjoy!
