Do you ever have leftover turkey or chicken that you're wondering what to do with? My family and I love this turkey casserole and I hope you do too.

Ingredients
  • 1 pound medium egg noodles - uncooked
  • 2 tablespoons of olive oil for sauteing the onion, green pepper and garlic clove
  • 1 onion - chopped and gently sauteed
  • 1 green pepper - chopped and gently sauteed
  • 1-2 garlic cloves, minced and sauteed with the onion and green pepper
  • 1 14-1/2 oz. can chicken broth - I use low sodium
  • 1 cup 2% milk
  • 1 tsp. salt - optional
  • 4 - 5 tablespoons cornstarch
  • 2 cups cooked turkey - chopped
  • 1 14 oz. can artichoke hearts - drained and cut into quarters
  • 8 Kalamata or your favorite olives - pitted and sliced
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup white wine
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon pepper
  • Cooking spray - vegetable oil
  • 1/4 cup grated Parmesan cheese
  • Note - Sometimes I toss in a handful of garlic flavored croutons

Directions
  1. Heat oven to 350 degrees F.
  2. Cook noodles according to package directions and drain.
  3. Stir the broth, milk, salt and cornstarch together in a large pot until the cornstarch is completely dissolved.
  4. Cook over medium heat, stirring constantly, until thickened and bubbly.
  5. Gently blend in noodles, onion, green pepper, garlic mixture, chopped turkey, artichoke hearts, sliced olives, mozzarella cheese, wine, lemon juice and pepper.
  6. Spray a 3 quart baking dish with cooking spray.
  7. Spoon noodle mixture into casserole dish.
  8. Sprinkle with Parmesan cheese.
  9. Bake for approximately 40 minutes.
  10. Allow to rest for 5 minutes before serving.
  11. Serves 4 - 6
