Cinnamon Coconut Ice Cream Squares Recipe

Ingredients

3-1/2c. Cinnamon Life cereal; crushed

1c. flaked coconut

3/4c. brown sugar; packed

1/2c. chopped pecans

1/2c. butter; melted

1/2 gal. vanilla ice cream; softened

Directions

Combine the cereal, coconut, brown sugar & pecans.

Drizzle with the melted butter and stir until well combined.

Press half of cereal mixture into a 13x9" pan.

Spread with softened ice cream.

Sprinkle with remaining cereal mixture & press down.

Cover & freeze until firm.

Let soften approx. 10 min. prior to serving.

Can be stored for 2 months in freezer.
