Six Pack Soup

- 1/3 cup chopped sweet onion shopping list
- 1/2 chopped sweet red pepper shopping list
- 1 clove minced garlic shopping list
- 1 pound smoked sausage cut into bite sized pieces shopping list
- 1 - 15.5 oz. can black beans, rinsed shopping list
- 1 - 15.5 oz. can red beans, rinsed shopping list
- 1 - 15.5 oz. can white beans, rinsed shopping list
- 1 - 10 oz. can Mexican style corn shopping list
- 2 - 15 oz cans low salt chicken broth shopping list
- 1 packet Fajita seasoning or taco seasoning, shopping list
- tortilla strips, sour cream and shredded cheddar cheese, for garnish shopping list
How to make it
- In dutch oven, saute the onion and pepper in olive oil until the onion
- is translucent.
- Add the smoked sausage and cook until browned.
- Add the garlic and cook for one minute.
- Add the "six pack" and the Fajita seasoning and simmer, stirring occasionally, until the beans start to break up a bit and make a nice creamy broth.
- Serve with a sprinkling of tortilla strips that are sauted to a golden
- brown in a bit of oil.
- You could also used slightly crushed tortilla chips.
- Then top with a dollop of sour cream and some shredded cheddar
- cheese to finish.
