How to make it

  • Preheat the grill.
  • Heat 6 Oatcakes/Belini's as per the packet instructions (normally a minute in the micro or 2 mins under grill.)
  • Spread each oatcake with cream cheese.
  • Top with a slice of salmon.
  • Add chunk of brie on top of the salmon.
  • Pop on a greased baking tray and put under the grill until the brie has melted.
  • Top with a stem of dill and serve immediatly on a tray as an appetiser, or allow 2 each guest on a bed of rocket salad and halved cherry tomatoes dressed with lemon juice as a first course.
