Curried Orange Chicken

- 4 - 6 boneless, skinless chicken breasts, cut into 2" pieces shopping list
- 1 large onion, chopped shopping list
- 1 green bell pepper, cut into 1" chunks shopping list
- 1 yellow bell pepper, cut into 1" chunks shopping list
- 2 garlic cloves, minced shopping list
- 1 cup orange juice shopping list
- 1/4 cup water shopping list
- 1/2 tsp. salt shopping list
- 1 to 1-1/2 Tbsps. curry powder depending on your personal taste shopping list
- 3/4 cup whipping cream shopping list
- 2 - 3 Tbsp. cornstarch (Try 2 tablespoons and if it's not to your liking, then add a 3rd.) shopping list
- Hot cooked rice or Asian noodles shopping list
- chutney shopping list
- More curry powder shopping list
- cashews shopping list
How to make it
- In a 3 - 4 quart crockpot, combine onion, peppers, chicken, garlic, orange juice, water, salt, and curry powder and mix well. Cover and cook on low for 6 - 7 hours until chicken is thoroughly cooked.
- In a small bowl, combine whipping cream and cornstarch and blend with a wire whisk.
- Stir into crockpot, turn heat to high, and cook for 15-20 minutes, stirring once, until sauce thickens.
- Serve over hot cooked rice or Asian noodles with chutney, more curry powder, and condiments.
- Serves 4-6
- Note: I like to have a bowl of fresh orange segments as part of the condiments. I also sprinkle fresh chopped parsley over the top.
