Stuffed Green Peppers

- 4 med sized green bell peppers shopping list
- 1 lb lean ground turkey shopping list
- 1/2 can (about 8 oz) tomato sauce (plus 8 extra spoonfulls to be used later) shopping list
- 1/2 yellow onion, chopped shopping list
- 2 garlic cloves, minced shopping list
- 1 /2 tub Garden Veggie or chive & Onion cream cheese shopping list
- 1 cup cooked brown rice, (mine was cooked in chicken broth) shopping list
- 1 tsp dried basil shopping list
- 1/4 tsp salt shopping list
- parmesan cheese (opt) shopping list
How to make it
- Preheat oven to 350
- Slice off top, and remove seeds and membranes of bell peppers
- Boil peppers in large pot of water for 3-5 minutes.
- Remove peppers from water and allow to dry on paper towels
- Brown turkey in skillet
- Add onion and garlic and cook 3-4 minutes
- Add remaining ingredients and mix completely
- Cook over medium-low for 2-3 minutes until well blended
- Place peppers in baking dish of your choice (i use a glass loaf pan)
- Stuff turkey mixture into peppers
- Top each with a couple of spoonfulls of tomato sauce
- Sprinkle with parmesan cheese (opt)
- Bake for 8-10 minutes

Hey Pam...Sounds delish..I have made variations of these several times...Love stuffed peppers...Have made them with ground beef/bison, ground pork and lamb (sometimes mix the two), But I hae never amde them with ground turkey or chicken...Great post....more
