Peach- Glazed Stuffed Pork Chops Recipe
I got this recipe from taste of Home several years ago and it is delicious. It is actually much easier than you would think and you can do a lot of the work ahead.

Ingredients
  • 1 1/2 cups onion ; finely chopped
  • 1 1/2 cups celery ; finely chopped
  • 1/3 cup butter
  • 6 cups bread cubes ; dry
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon sage
  • 1/8 teaspoon pepper
  • 1 can peach slices in syrup ; drained and diced
  • 2 eggs
  • 1 cup water
  • 2 tablespoons fresh parsley ; chopped
  • 6 boneless pork chops ; 1 1/4 inch thick
  • 2 tablespoons oil
  • garlic salt ; to taste
  • pepper ; to taste
  • 1/4 cup peach preserves

Directions
  1. In a skillet, saute onion and celery in butter until tender; transfer to a large bowl.
  2. Add bread cubes, poultry seasoning, sage and pepper.
  3. Fold in peaches.
  4. Combine eggs, water and parsley; add to bread mixture.
  5. Toss gently until well mixed.
  6. Cut a large pocket in the side of each pork chop; spoon stuffing lightly into pocket.
  7. Sprinkle chops with garlic salt and pepper.
  8. In a large skillet, brown chops on both sides in oil.
  9. Place remaining stuffing in a greased 13 x 9 inch baking dish.
  10. Top with chops.
  11. Spread preserves over chops.
  12. Cover with foil and bake at 350 degrees for 45 minutes.
  13. Uncover and bake for an additional 15 minutes longer or until juices run clear.
