Peach- Glazed Stuffed Pork Chops

- 1 1/2 cups onion ; finely chopped shopping list
- 1 1/2 cups celery ; finely chopped shopping list
- 1/3 cup butter shopping list
- 6 cups bread cubes ; dry shopping list
- 1/2 teaspoon poultry seasoning shopping list
- 1/2 teaspoon sage shopping list
- 1/8 teaspoon pepper shopping list
- 1 can peach slices in syrup ; drained and diced shopping list
- 2 eggs shopping list
- 1 cup water shopping list
- 2 tablespoons fresh parsley ; chopped shopping list
- 6 boneless pork chops ; 1 1/4 inch thick shopping list
- 2 tablespoons oil shopping list
- garlic salt ; to taste shopping list
- pepper ; to taste shopping list
- 1/4 cup peach preserves shopping list
How to make it
- In a skillet, saute onion and celery in butter until tender; transfer to a large bowl.
- Add bread cubes, poultry seasoning, sage and pepper.
- Fold in peaches.
- Combine eggs, water and parsley; add to bread mixture.
- Toss gently until well mixed.
- Cut a large pocket in the side of each pork chop; spoon stuffing lightly into pocket.
- Sprinkle chops with garlic salt and pepper.
- In a large skillet, brown chops on both sides in oil.
- Place remaining stuffing in a greased 13 x 9 inch baking dish.
- Top with chops.
- Spread preserves over chops.
- Cover with foil and bake at 350 degrees for 45 minutes.
- Uncover and bake for an additional 15 minutes longer or until juices run clear.
