Dijon Mustard Chicken Fricassee Recipe
Creamy chicken fricassee with dijon mustard added. Very tasty.

Ingredients
  • 1/4 c dijon mustard
  • 1/4c chopped fresh parsley,divided
  • 1Tbs chopped fresh thyme,divided
  • 3lbs. chicken pieces,skinned
  • 1/4tsp salt
  • 1/4tsp fresh ground pepper
  • 1Tbs olive oil
  • 11/2c chopped onion(about 1 large)
  • 3 garlic cloves,minced
  • 1c dry white wine
  • 1c fat-free less-sodium chicken broth

Directions
  1. Combine mustard,1Tbs parsley,11/2tsp thymeand chicken in large zip-top plastic bag; toss well to coat.Chill 8 hours or overnight.
  2. Remove chciken from bag,and discard marinade. Sprinkle chicken with salt and pepper.. Heat olive oil in large dutch oven over med-high heat. Add chicken to pan and cook 5 mins. each side or till browned. Remove from pan.
  3. Add chopped onion to pan,and saute 5 mins or till tender,stirring frequently. Add garlic to pan,and saute 1 min,stirring constantly. Stir in wine and chicken broth,scraping pan to loosen browned bits. Stir in 1Tbs parsley and remaining 11/2tsp thyme. Return chicken to pan. Cover,reduce heat,and simmer 25 mins or until chicken is done.Remove chicken from pan with slotted spoon. Keep warm.
  4. Cook sauce,uncovered,over medium heat 4 minutes or until slightly thick. Pour sauce over chicken,and sprinkle with remaining 2Tbs. parsley
