Ingredients
  • 4 chorizo sausages
  • 1 box of penne
  • 1 jar of your fav tomato sauce (or homemade if you have time)
  • 2 red peppers
  • 1 green pepper
  • 1/2 c of spanish onion
  • 1/2 c reggiano parmiagano cheese (grated)
  • 1/4 c freshly chopped basil
  • tsp chilli flakes
  • 2 cloves of fresh garlic

Directions
  1. chop up onion and garlic
  2. add Olive oil to medium size fry pan
  3. add garlic and onion saute for about 3 min
  4. add sausage (prick each one with fork)
  5. cook for about 5 min
  6. cut sausage into pieces and remain cooking for 2 min
  7. add half of the jar of sauce
  8. add the reggiano cheese and stir frequently
  9. add chopped peppers and chilli flakes
  10. continue cooking at a low heat
  11. meanwhile cook pasta according to package
  12. add the rest of the sauce and salt and pepper to taste
  13. finally add the basil
  14. strain the pasta
  15. mix together and serve
