Spicy Chicken With Raisins

- 1 dessertspoon vegetable oil shopping list
- 4 chicken breast skinless. ( thighs can be used but use 8 ) shopping list
- 1 onion chopped shopping list
- 4-5 loves garlic crushed shopping list
- 2 tsp ground cumin shopping list
- 3 tblsp raisins shopping list
- 2 level tblsp tomato paste shopping list
- 1 bay leaf shopping list
- 200ml water shopping list
- 250g frozen spinach, thawed and drained shopping list
How to make it
- Heat the oil in a none-stick pan and cook the onion gently for 5 minutes
- Add the cumin, bay leaf,and garlic and continue cooking until the onion is soft
- Add a little water if the mixture starts to stick
- Add the chicken and continue to cook over a low heat for about 5-10 minutes, stirring occasionally
- add the tomato paste, water and raisins and stir
- cover and simmer for 15 minutes
- Finally add the thawed, drained spinach and cook for another five or so minutes until the mixture is heated through
- Serve with couscous, brown rice or potatoes with a hot green vegetable such as broccoli or green beans
