This dish is a take-off of the old Shepard's pie but much easier.

Ingredients
  • 1 pie crust
  • 1 Pound ground beef
  • 1 small onion
  • 1/2 Cup cheese
  • 3-4 Cups prepared mashed potatoes
  • 1/4 Cup additional cheese

Directions
  1. Defrost pie crust and set aside
  2. Pre-heat oven to 375 degrees
  3. Brown ground beef and onions, drain
  4. Stir in 1/2 Cup of cheese just until blended
  5. Put ground beef mixture in the pie crust
  6. Completely cover pie with prepared mashed potatoes (I used one package 4 cheese instant potatoes prepared according to package directions)
  7. Sprinkle remaining 1/4 cup cheese on top
  8. Bake for 30-35 minutes. Let set about 5 minutes before slicing.
