  • 1/2 lb. bacon, fried and crumbled
  • 2 pkg. (individual size) instant grits
  • 1/2 cup milk
  • 1 egg
  • 1 cup self rising flour
  • 1/2 cup shredded cheese

Directions
  1. Make grits according to directions on package
  2. Add milk, egg, cheese and flour
  3. Combine until moistened
  4. Fold in bacon
  5. Line muffin 12 muffin tins with paper liners.
  6. Spray with non-stick spray
  7. Divide mix equally into muffin tins
  8. Bake 20 minutes in a 400 degree oven

This can be made with sausage or ham instead of the bacon. The texture is creamy with a hint of grain from the grits. They are best served right out of the oven or reheated later. A little split in the center and a little pat of butter and you are in "Grit Heaven."


I can see this on top of my to go coffee cup in the morning.


This is one of those recipes that make you say.."why didn't I think of that?"....I absolutely love it, and will definitely be making it soon...now, all I have to do is decide which meat I want...sigh..

I made this recipe up one night while making breakfast for dinner. I took a couple to work with me the next day and nuked them. They really hit the spot.


Had to come back and email this to my aunt...I think she'll love it...have you ever tossed any cheese in them?
