How to make it

  • Preheat your oven to 475
  • Take your roast, and rub the olive oil all over it.
  • Salt the roast... WELL, I go for a crust of salt.
  • Go light on the pepper, but make sure you get the whole roast.
  • Take the rosemary and just place the sprigs under the strings that are holding the roast together.
  • Place on a rack in a roasting pan and pop into the oven for 1 hour.
  • After the hour is over, you'll have a lovely crust, turn the oven down to 350
  • Depending on the size of your roast, and how you like it, depends on how long it will take after words. I like it med. rare, so after about 30 min, for a 3 bone roast, I check it, and it's usually right on.
  • If you have one of those timer thermometers, that go off when the meat hits a certain temp. I suggest using it.
  • Let the roast rest for 20 min covered with foil.
  • Carve, and devour.
