Ingredients
  • 1/4 cup + 2 teaspoons extra virgin olive oil
  • 1/2 medium onion minced
  • 2 cloves garlic minced
  • 1/4 lb ground veal
  • 1/4 lb ground pork
  • 1/4 lb ground beef
  • 1 large egg
  • 1 large egg yolk
  • 1/2 cup Parmesan cheese
  • 1/4 cup Seasons breadcrumbs
  • Fresh ground pepper
  • Pinch crushed red pepper flakes

Directions
  1. In a sautee pan add olive oil, onions, and garlic. Sautee until they get soft just past translucent.
  2. In a mixing bowl add the ground meat. To the ground meat add sauteed onions, garlic, eggs, Parmesan cheese, and breadcrumbs mix using hands.
  3. Season mixture with salt and pepper. Add red pepper flakes and mix again.
  4. Roll into balls and cook in the sautee pan. Add a little olive oil if necessary, just enough to coat the bottom of the pan. Cook on low heat and turn them frequently so they don't stick. Brown until done.
  5. Enjoy as a side to pasta, or on their own!
