~~A sour Stewed Rabbit~~

Ingredients
  • 1(3 Pound) Rabbit,about
  • Vinegar and Water of same amount to cover the hair
  • 1/2 Cup Sugar
  • 1 Onion,sliced
  • Pinch of Salt and Pepper
  • 1 teaspoon Pickling spices
  • Let stand in ice box for 2 days at least.
  • Remove the rabbit,dry,dip in flour,brown in lard.
  • Add 1 cup of the vinger water,cover,simmer for about 1-1/2 hours or until tender.

Directions
  1. ~~Talking about the depression,Grandma would say"Things were pretty scarces".
  2. ~~She never turned a stranger away from her door if they were hungry.
  3. ~~She mention on one occasion that she had fried a Jack Rabbit..they seemed to be pretty plentiful..that is.. if the coyote and bobcat population did'nt get down to far.
  4. ~~Anyway~~on this particular time,this guy came by looking for work,Grandad and Grandma did'nt have any for him,but seeing that he was as skinny as a rail,Grandma ask if he would like to sit down for supper.
  5. ~~He ate his share,rubbed his stomach,gave his thanks and stated"That was the best Fried Chicken he had,had in a long time."
  6. ~~She did'nt have the heart to tell him it was Jack Rabbit.
  7. ~~Jacket Rabbit.....I never aquired a taste for it myself..but...You ate what's in front of you,be grateful,and don't complain.
  8. ~~I try to remember that from time to time!

I think this should come out good and tender. The vinegar will make the meat soft and juicy. Now just need to catch me some rabbit!


You ate what's in front of you,be grateful,and don't complain,is the way my grandparents brought me up.We had rabbits, deer, turtle stew, you name it, we had it.I loved when my uncle killed a hog or a cow, so we could eat normal foods, lol.


I hear ya bluewater-We ate possum, coon, cooter, squirrel and anything else Daddy brought home...lol There's no way my youngin' would eat that now. I'm not complaining though, we were glad to have whatever. I didn't know we were suppose to be poor til I got older and Momma said we were..... :-)
