West African Chicken and Groundnut Stew

- 2 whole boneless, skinless chicken breasts, cut into 1/2 inch pieces shopping list
- 1 tbls. oil shopping list
- 1 onion, chopped shopping list
- 1 clove garlic, finely chopped shopping list
- 1 28 oz. can whole tomatoes, undrained and cut up (I squish them in my hands to break them up) shopping list
- 1 can great northern beans, undrained shopping list
- 1 can of corn or 1 box frozen corn shopping list
- 1 sweet potato, peeled and diced shopping list
- 3/4 cup water shopping list
- 1/4 cup creamy peanut butter shopping list
- 1 tbls. tomato paste shopping list
- 1 tsp. salt shopping list
- 1 tsp. chili powder shopping list
- 1/2 tsp. ginger shopping list
- 1/2 tsp. cayenne pepper shopping list
- 3 cups hot cooked white rice shopping list
How to make it
- In dutch oven, add oil and cook chicken until no longer pink
- Add onion and garlic and cook until onion is tender
- Add remaining ingredients except rice and stir until combined
- Bring to boil
- Reduce heat to medium low, cover and cook until sweet potato is tender...About 30 minutes
- If stew gets too thick, add additional water
- Serve over white rice
- Serves 8
