How to make it

  • In dutch oven, add oil and cook chicken until no longer pink
  • Add onion and garlic and cook until onion is tender
  • Add remaining ingredients except rice and stir until combined
  • Bring to boil
  • Reduce heat to medium low, cover and cook until sweet potato is tender...About 30 minutes
  • If stew gets too thick, add additional water
  • Serve over white rice
  • Serves 8

    I must try this ... I like the combo of flavors.
    You squish the tomatoes in your hands. My wife sticks a sharp knife in the can and zips back and forth with it. It looks like she's trying to catch a fish.
